Pasta salad is a dish prepared with one or more types of pasta, usually chilled, and most often tossed in a vinegar, oil or mayonnaise-based dressing. It is typically served as an appetizer or a main course.A pasta salad with shrimp, chicken and vegetables. The ingredients used vary widely by region, restaurant, seasonal availability, and/or preference of the preparer. The salad can be as simple as cold macaroni mixed with mayonnaise (a macaroni salad), or as elaborate as several pastas tossed together with a vinaigrette and a variety of fresh, preserved or cooked ingredients. These can include vegetables, legumes, cheeses, nuts, herbs, spices, meats, poultry, or seafood. Broccoli, carrots, baby corn, cucumbers, olives, onions, beans, chick peas, peppers, parmesan and feta cheeses are all popular ingredients in versions typically found at North American salad bars.Pasta salad is often regarded as a spring or summertime meal, but can be served year-round.In Australian and New Zealand cuisine, pasta salad became increasingly popular during the 1990s when commercial versions became more readily available in supermarket stores across both Australia, and New Zealand. It is made up of cooked pasta pieces (usually either shell pasta, elbow shaped pasta or Penne) covered in mayonnaise and accompanied by carrots, capsicum (bell peppers), and sometimes celery. It is similar in style to the American macaroni salad.Pasta primavera is a dish that consists of pasta and fresh vegetables. A meat such as chicken is sometimes added, but the focus of primavera is the vegetables themselves. The dish may contain almost any kind of vegetable, but cooks tend to stick to firm, crisp vegetables, such as broccoli, carrots, peas, onions and green bell peppers, with tomatoes. Pasta primavera is usually highlighted by light flavors, aromatic herbs and bright colors ("primavera" meaning "spring"). Classic primavera sauce is based on a soffritto of garlic and olive oil, and finished with Parmesan cheese. However versions further enriched by, or based on, a heavier cream are also common. Though recipes for cold pasta primavera may be found, they are best classified as antipasti, or appetizers.Pastas served with this dish are typically smaller shapes, such as penne. If using longer types of pasta, such as fettuccine, the vegetables are normally sliced in thin strips to match the shape of the noodles.Since primavera means spring, the vegetable choices should be the crisp new vegetables of spring.Pasta primavera with shrimp In 1975, New York chef Sirio Maccioni flew to the Canadian summer home of Italian baron Carlo Amato, called Shangri-La Ranch located on Robert's Island, Nova Scotia. Maccioni and his two top chefs began experimenting with game and fish, but eventually the baron and his guests wanted something different.Maccioni then mixed butter, cream, and cheese with vegetables and pasta together and brought the recipe back to New York. The fame of pasta primavera traces back to the New York restaurant Le Cirque, where it first appeared as an unlisted special before it was made famous through an 1977 article in the New York Times by Craig Claborne and Pierre Franey which included a recipe for the dish. The invention of the dish is contested. Le Cirque co-owner Serio Macchioni claimed that his wife Egidiana threw it together from ingredients on hand during a trip to Nova Scotia; Ed Giobbi, an amateur cook himself, claims to have shown Macchioni and Jean Vergnes (then chef at Le Cirque) a similar dish which Vergnes then slightly modified. All accounts agree that Vergnes refused to allow the dish to be prepared in the kitchen, so that the many requests for it had to be satisfied with a pot set up in a hallway. The combination of lightly cooked vegetables and pasta, which Claiborne and Franey hailed as "by far, the most talked-about dish in Manhattan", is widely recognized as one of the signature developments of American cuisine in the 1970s.Salad is a dish consisting of small pieces of raw or cooked food mixed with a sauce and almost always served cold. Salads can be based around a wide variety of foods including vegetables, fruits, and cooked meat, eggs, and grains. Garden salads use a base of leafy greens; they are common enough that the word salad alone often refers specifically to garden salads. Other types include bean salad, tuna salad, fattoush, Greek salad, and somen salad. The sauce used to a flavor a salad is commonly called a salad dressing; well-known types include ranch, Thousand Island, and vinaigrette. Most salads are served cold, although some, such as south German potato salad, are served warm. Some consider the warmth of a dish a factor that excludes it from the salad category calling the warm mixture a casserole, a sandwich topping or more specifically, name it for the ingredients which comprise it.Salads may be served at any point during a meal, such as:Appetizer salads, light salads to stimulate the appetite as the first course of the meal.Side salads, to accompany the main course as a side dish.Main course salads, usually containing a portion of heartier fare, such as chicken breast or slices of beef.Palate-cleansing salads, to settle the stomach after the main course.Dessert salads, sweet versions often containing fruit, gelatin and/or whipped cream.
